WHere is an easy version of a cocktail from the seasonal drinks list. Designed as a large-volume prepared mix that is bursting with flavours of a festive period, rendering it perfect for a festive gathering. Any leftover cordial to use in morning drinks, desserts, or for more rounds of bikinis.

Serves 10 guests
For the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Premix (yields 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Method
For the Syrup: Combine all the ingredients inside a pan, heat until it reaches a light boil, agitating until the sugar dissolves. After that, remove from the heat and leave to reach room temperature completely. Decant into a clean bottle, close it and refrigerate it chilled, where it will keep for about one month.
For the Batch Mix: Combine the specified liquids into a sizeable container, allow it to infuse for 60 minutes, then strain best through a fine cloth, to ensure it's completely strained.
When ready to serve: Add 85ml from the batch mix to a mixing glass packed with ice, gently stirring lightly for about 60 seconds to chill. Pour into an cold coupe glass or similar, top with a few cranberries and complete it using a light spray of the essential oil over the drink.
